Red Quinoa Tuna Melts!



Made them for the whole fam :-)


Served with Homemade Jasmine/Green Tea Iced Tea

Ingredients:

- Can of Tuna
- Red Quinoa (very very very good for you)
- Dill Pickles, chopped
- Carrot, chopped
- Celery, chopped
- Garlic, chopped
- Lemon juice (and zest)
- Sea Salt and Crushed Black Pepper
- Mayo
- Bit of Oregano
- Bit of Cayenne Pepper

Served on Whole Wheat Seed Bread with Havarti and Baby Mozerella melted on top.

Quinoa Salad

My sister requested I make her a Tabouli Salad for her to bring to school for lunch tomorrow. Unfortunately we did not have the correct ingredients. Luckily though we had things to make something similar though nicely different.

Other than the Quinoa (which can be a pain to make) this is relatively easy to prepare and actually very healthy because Quinoa is a complete protein and everything else is from scratch and unprocessed.


Indigents:

- dressing: 1 lemon juice (and zest'd), tbsp honey, splash of olive oil, pinch of cayenne pepper, dried parsley, 2 garlic cloves minced, crushed chilli flakes, salt and pepper
- quinoa (soaked, cooked, drained, fluffed, cooled)
- baby spinach, chopped
- carrots, chopped
- cherry tomatoes, sliced
- cucumber (peeled, cored, sliced)
- green onion, chopped
- white onion, chopped
- fresh mint leaves, chiffonade'd (my new cooking term of the week)
- dry parsley

Turned out very good, took about 30 minutes to make, including quinoa cook time.

Chicken Stir Fry

This stir fry was very easy to make, just need to cut everything thin, heat up the wok, and stir.



Ingredients:

- marinade / sauce: soy sauce, hoisin sauce, garlic, ginger, green onion, crushed chilli pepers, honey
- olive oil
- onions
- garlic
- ginger
- carrots
- green peppers
- bean sprouts
- snow peas
- mushrooms
- baby bok choy
- green onions
- chicken, marinated
- brown rice
- spring rolls (pre packaged..)

Note: I cooked the chicken separately after marinading it for a few hours, then chopped it up
