Piri Piri Chicken and Tabouli Salad

Alright, so I've kinda hooked on Jamie Oliver's 30 minute meals.. That being said, the other day I caught his Piri Piri Chicken episode and it got stuck in my head.

Tonight I made it accompanied with a very simple Quinoa Tabouli Salad.

Piri Piri Chicken:

- chicken wings (can be any kind of chicken really, as long as it's bone in skin on)
- sear both sides then add to pan in oven with sauce

Piri Piri Sauce:

- 1/2 red onion, finely chopped
- 3-4 garlic cloves, finely chopped (I used 4)
- chrushed red chilli flakes
- 1 tbsp paprika
- 1 lemon (zest and juice)
- 2 tbsp white wine vinegar
- 1 tbsp worcestershire sauce
- a bunch of fresh basil
- sprinkle of thyme
- salt and pepper

Put in food processor and blend until smooth while adding a little water

After adding the sauce to the chicken in the pan, cook on 400 for about 10 minutes or until fully cooked through (internal temp of 168 F degrees)

Tabouli Salad:

- quinoa, 1 cup (cooked and cooled)
- tomatoes, finely chopped
- cucumber, finely chopped
- red onion, finely chopped
- 3 cloves of garlic, finely chopped
- 1/2 lemon juice and zest
- 1 cup parsley
- salt & pepper to taste

Damn good recipe, quick & easy.

Homemade Guacamole

Very simple, very good.

Ingredients:

- 1+ Avocados, peeled, seeded, sliced, cubed (depending on how many ppl)
- Juice of 3/4 - 1 Lemon (depending on size) can also use lime instead
- 2 Garlic cloves, minced
- White Onion, sliced finely
- Cumin powder
- Salt & Pepper (to taste)
- 1/2 a Tomato, sliced, cubed
- Cayenne powder (optional)

Directions:

- Add chopped avocado, garlic, and lemon juice to a bowl.
- Mash with a fork to desired consistency
- Add powdered ingredients (salt, pepper, cumin, cayenne, etc)
- Mix together
- Add onion
- Mix together
- Add Tomatoes last and mix together lightly so as not to bruise them

Note: Keep avocado pits in guac to keep it fresh.

Soft shell tacos on Family dinner night, Guac didn't last long.. Soo good.

Greek Burgers and Salad

Greek Salad:

- Romaine Lettuce
- Tomatoes
- Kalamata Olives
- Cucumber
- Dressing:
   - Red Wine Vinegar
   - Olive Oil
   - Garlic
   - Oregano
   - Dijon Mustard
   - Sugar
   - Lemon Juice

Burgers:
- Medium ground beef
- Greek feta, crumbled
- Kalamata olives, pitted and chopped
- Whole wheat bread crumbs
- Oregano
- Onion
- Salt and Pepper
- Brushed with Olive oil and rested on baking tray in fridge covered
- Greek Yogurt Sauce
   - Greek Yogurt, plain 1 cup
   - Cucumber, seeded peeled half grated
   - Lemon juice
   - Olive Oil
   - Avocado, half chopped

BBQ on high for 5ish minutes per side on just less than full

Serve on freshly baked bun (toasted optional), 2 tbps of yogurt sauce, 2 slices of cucumber and a slice of tomato.

Great recipe, almost tasted like a Souvlaki.

Red Quinoa Tuna Melts!



Made them for the whole fam :-)


Served with Homemade Jasmine/Green Tea Iced Tea

Ingredients:

- Can of Tuna
- Red Quinoa (very very very good for you)
- Dill Pickles, chopped
- Carrot, chopped
- Celery, chopped
- Garlic, chopped
- Lemon juice (and zest)
- Sea Salt and Crushed Black Pepper
- Mayo
- Bit of Oregano
- Bit of Cayenne Pepper

Served on Whole Wheat Seed Bread with Havarti and Baby Mozerella melted on top.

Quinoa Salad

My sister requested I make her a Tabouli Salad for her to bring to school for lunch tomorrow. Unfortunately we did not have the correct ingredients. Luckily though we had things to make something similar though nicely different.

Other than the Quinoa (which can be a pain to make) this is relatively easy to prepare and actually very healthy because Quinoa is a complete protein and everything else is from scratch and unprocessed.


Indigents:

- dressing: 1 lemon juice (and zest'd), tbsp honey, splash of olive oil, pinch of cayenne pepper, dried parsley, 2 garlic cloves minced, crushed chilli flakes, salt and pepper
- quinoa (soaked, cooked, drained, fluffed, cooled)
- baby spinach, chopped
- carrots, chopped
- cherry tomatoes, sliced
- cucumber (peeled, cored, sliced)
- green onion, chopped
- white onion, chopped
- fresh mint leaves, chiffonade'd (my new cooking term of the week)
- dry parsley

Turned out very good, took about 30 minutes to make, including quinoa cook time.

Chicken Stir Fry

This stir fry was very easy to make, just need to cut everything thin, heat up the wok, and stir.



Ingredients:

- marinade / sauce: soy sauce, hoisin sauce, garlic, ginger, green onion, crushed chilli pepers, honey
- olive oil
- onions
- garlic
- ginger
- carrots
- green peppers
- bean sprouts
- snow peas
- mushrooms
- baby bok choy
- green onions
- chicken, marinated
- brown rice
- spring rolls (pre packaged..)

Note: I cooked the chicken separately after marinading it for a few hours, then chopped it up
